The entire executive meeting of the Community War Services was devoted to canning methods, even though Victory Gardens had just been planted and harvest was a long way off. The two major methods of canning were demonstrated with preference given to the use of the pressure cooker, which only took about an hour to can beans compared to the three hours required by the conventional water bath method. Considering the fact that the average person would need 100 cans per year, the savings would be considerable. Pressure cookers are available for purchase at about $15 each but only to groups of five persons or more. Mrs. C. Sawtell was chairman of nutrition for the group. (Bristow)
